How do you make a footman cast defend in a cinematic??? And also how do you make any unit cast a spell in a cinematic?

these triggers should work:

unit - issue order targeting a unit
unit - issue order targeting a point
unit - issue order with no target

(These maybe aren´t the exact triggers but something like that)

make sure the ability/spell is researched by default. You can play with this in the tech-tree.

Make sure that you change the defend ability from available to Researched

Also, in a cinematic I suggest making all players neutral towards each other, or else you can't target them with stuff like Chain Lightning.

Don't make them enemies either, or else they'll fight before you want them too.

In umswe you can let them all technicaly be in the same team but have different colors, however I wouldnt reccomend this because when they speak (dialogue) the interface you see will still be the origanal color.
