How do you "Alpha" something out in Photoshop?

I've read what KDEwolf wrote, and I can get rid of team color, but I still don't get how you remove a certain part out? On which channel do I have to be? What color do I use? (black or white?) Pretty much anything that can help me figure out, let's say how to get rid of the pouch on the side of a peasent. Or, whatever, you get the point.

Hmm, now it just did team color of it. I wanted to remove the wings from the gryphon (or make em transparent through alpha or whatever) so (in phothoshop) I clicked on the alpha channel, so I was painting in it, as well as pressing the eye on the other channels (so I see the whole skin, and everywhere else in red is apparently transparent) so I just painted on the alpha channel in black (which appeared as a red mask like the rest over the wings) and when I checked out my skin all it was, was a gryphon with the same shaped wings, just red with team color now...

The model has to be edited for it to be transparent, then.

Again:
white = opaque
black = transparent or teamcolor depending upon the model part
