how would you get a unit to regularly use the model of the burrowed crypt fiend?

There isn't a separate model for a burrowed crypt fiend, it just uses a different animation of the same Crypt Fiend model.

Look at burrowed crypt fiend and look for the required animation name. The thing is, this animation will only apply to the model of a crypt fiend, so you will not be able to give a peasant a burrowed crypt fiend look.

i tried the required animation names (its "middle" go figure..) but it doesn't seem to work...

c0nnick: Yes. Change the skin that's used for the Avatar MK to the name of the skin used for the normal MK. Voila, he's gray.

Another way of doing this would be using the "Animation - Add/Remove Unit Animation Tag". I doubt that would work very well for the Crypt Fiend, though... Since there are no animations of him moving while burrowed, he'll pop up instanteously whenever ordered to move.
