How can I replace original textures with new ones, so that whenever you build a grunt on any map it will use my custom skin?

If you want it to be gloabally on any map in your comp., you could import it into your patch.mpq.
I wouldn't recommend doing this, but whatever.

k, thanks, how can I do that though? I'll be sure to backup my patch.mpq if I attempt it.

Open WinMPQ, then open up the patch.mpq (inside of WinMPQ). Click add and then find the grunt.blp that you want. Then enter the fields before it ('Textures\' or 'Units\Orc\Grunt\') or watever it may be.
Then close WinMPQ and try running Wc3. :D
