So basically, you wan't to play/sing/speak live, and record it.

Ok, sound recorded will do it, but it's pretty bad, and has no options/fx etc.

Plug the mic into the line in, and get hold of a WAVE EDITOR like Goldwave, Cool Edit, Sound Forge (What i use), Wave Lab etc.

This will allow you to record the sound, trim it , and put effects on it/master it/fiddle with the volume etc.

To get started recording, check out this tutorial of mine: http://www.samods.com/index.php?cmd=article&aid=3

As for the piano ... I have no idea. Is it an actual piano? I'm not sure, but I would recommend a digital one. I suppose a normal one would work if it's near the mic, but a digital one would be more customisable.
I'll let Maglok or the other composers field this one. :P
