Difference between Food Cap and Food Max? Anybody?

Whats the real difference between the Food Cap and the Food Max triggers? I can really figure out what the Food Max effects.

Food Max is the maximum potential food you can have... by default, it is 90, and it CANNOT be made more... although it can be made less. Food Cap is the current amount of food you are producing. And food used is, well, duh

If you want to have unlimited food, just make all the units have a Supply Cost of 0.

or learn dll hacking and edit the game to remove the limit. Fortunatly, if you know enough to be able to do that, you probably don't care.
